It’s Thursday again. I want to start by saying welcome to Thrifty Mommy. We are so glad to have you here. I would love to introduce you to a new series we are doing at Thrifty Mommy, the Thursday Cleaning Challenge. I want to challenge you today to clean out your fridge. I don’t mean just empty out those containers. Here are the things you need to do. It won’t take you too long. Set aside about 30 minutes and you will feel so much better later.
- Take out each shelf and clean it.
- Wipe down the inside of the inside walls.
- Check the date on all your dated foods. Throw away the old stuff.
- Wipe out your drawers.
- Wipe the outside and sweep underneath as far as you can.
- Don’t forget the top. Get out a stool and wipe the top of your fridge down.
I know the flyladies would not be happy that it takes longer than 15 minutes so break it down if you have to. Do half the shelves and the outside today and the rest of the shelves and the top tomorrow.

A few weeks ago, I wrote about some ways to get free formula and other things for your baby. Well, here is one more way to add to that list.
If you will save your Beechnut baby food proof of purchases, you can send them in to get coupons from Beechnut. Just click on the link that says, “Save labels and save more”.
This week I have been doing some major purging of papers. My recycling bin is getting full already! The good news for you is that I found my stash of Beechnut food food labels. I have about 80 of them.

Don’t forget about the FREE iced coffee at Dunkin’ Donuts tomorrow. In case you can’t make it or you want to make your own, Dunkin’ Donuts has been nice enough to share some of their yummy recipes with us. These recipes are by Stan Frankenthaler, Executive Chef for Dunkin’ Donuts.
All beverages can be garnished with whipped cream or topping of choice.
Very Merry Berry
3/4 oz Sweetened Raspberry Syrup (found at local retailer)
8 oz double brewed Dunkin’ Donuts coffee
1 oz of cream
1 tbs sugar
3/4 cup frozen mixed berries
Peanut Butter Bomb
8 oz double brewed Dunkin’ Donuts coffee
1 regular scoop of vanilla ice cream (1/2 cup)
2 tbs caramel syrup
1 tbsp of creamy peanut butter
1 tbs of chocolate syrup
Combine all ingredients in blender and blend until smooth. Pour into glass over ice.
Almond Joyish
8 oz double brewed Dunkin’ Donuts coffee
1 regular scoop of vanilla ice cream (1/2 cup)
1 tbs sugar
2 tbs pina colada mix or coconut cream
2 tbs chocolate syrup
Combine all ingredients in blender and blend until smooth. Pour into glass over ice.
Iced Chocolate Vanilla Cappuccino
1/2 cup sugar
1 cup water
3/4 cup sugar syrup
1 1/4 cup Dunkin’ Donuts espresso (Customize with chocolate and French-vanilla flavor shots or use 1/2 tsp vanilla extract.)
Bring water to a boil. Boil one minute and stir to completely dissolve sugar. Set aside to cool. Measure and combine sugar syrup and espresso. Place in flat bottom baking pan and place in freezer. Whisk every 20 minutes until frozen - color will lighten and texture will become “icy”. When firm, whisk and allow to freeze overnight. To serve: scoop into oversized cappuccino mug and serve with foamed skim milk.

Each time I turn on the news or open a newspaper, there is information about the rising cost of gas and groceries and people that are struggling to make ends meet. While there is absolutely nothing I can do about the cost of gas, I can work pretty hard to cut our grocery bill.
Here are some of the biggest and easiest ways to save on groceries:
1) Look through your cabinet and see what you already have.
2) Sit down and plan your meals using the sales flyer and considering what you already have in your pantry.
3) Stock up on items that are at rock bottom prices. This past week, Lowe’s Foods had ground turkey for .99/lb. I haven’t seen the price that low in a long, long time. I bought 5 packages and put them in the freezer.

Ten-year-old Andrew Niemi of Carleton, Michigan began collecting pennies for his school in December 2006. He held fundraisers to reach his goal of 1 million pennies. Last week, Andrew presented a check for $10,000 to St. Patrick Catholic School. The money will be used for audiovisual hardware, classroom maps, and a concrete bench.
I don’t know about you, but this story makes me feel warm and happy inside. What a great story in selflessness and determination.

I love reading Wendy Piersall’s blog, Sparkplugging. She and Dawud do a great job of keeping us in the loop when we work from home. She has recently challenged us to do a blog post in 5 minutes and make it worth reading. So here I go:
I recently found Henny’s blog, All about kids. She had an interesting post on what was in her fridge and was worried about if food coloring was safe for her kids. I ended up ROTFL. The post wasn’t funny but it reminded me of my latest cleaning frenzy in the fridge. I unfortunately don’t worry about whether the food coloring is ok for my kids. I worry if the color is food coloring or something more in tuned to a scientific experiment. I know that sounds gross but sometimes, I miss a container or 2 when I clean out the fridge. So every once in a while, a container slips through my fingers and stays in the fridge too long. It’s disgusting, I know but I am human.
So stay tuned to the Thursday Cleaning Challenge each week. If I forget, kick me in the butt and remind me. But I will do my best to challenge you to clean one forgotten area each week.

With the rising price of groceries, we all could use some inexpensive recipes for our families. This is a slow-cooker recipe and it is great because it is easy, tasty, healthy, and inexpensive! Score!
Ingredients:
- chicken (I used 4 boneless breasts)
- 1 can diced tomatoes (I used the ones with green chilies)
- green salsa (such as the kind made by Herdez)
- minced garlic
- sliced onions
- sliced bell peppers
- salt and pepper (I used Goya Adobo seasoning, which is one of our faves!)
- 14 oz can of kernel corn, drained
- 15 oz can of black beans, drained and chopped or mashed
In a crock pot, put in your chicken, tomatoes, about 3/4-1 cup of green salsa, about 1 cup of sliced onions, some sliced bell peppers (if you wish), about 3 cloves minced garlic (I used the bottled minced) and salt and pepper (or Goya Adobo seasoning). Cook the chicken for about 3-4 hours, until tender.
Take the chicken out of the crock pot and set it on a plate or cutting board to let it cool some. Drain the juice out of the vegetables, reserving some of the liquid. Put the vegetables back into the crock pot. Add the can of drained corn and drained black beans. Cut up or shred the chicken and put it back into the crock pot. Add a little more of the green salsa (about 1/4 cup) and some of the liquid from the vegetables that you drained (about 1 cup). Stir all this together and allow it to cook for another 15-20 minutes.
Use the chicken in tacos, burritos, or quesadillas. Yummy!
We had enough of this chicken to feed our family of four and then some to freeze for another meal. I also served this recipe with Spanish rice. We topped our tacos with cheese and sour cream and a bit of fresh, homemade salsa (pico-de-gallo). Sorry, I wish I had a picture to share.
